1 cup olive oil
Half cup vinegar
- Boil the potatoes in plenty of salted water.
- Once they are soft, drain, peel and mash them.
- Blend the garlic with the oil and vinegar.
- When the mixture has turned into a paste, add the mashed potatoes, stir, season and serve.
TIP: If desire, you can replace the potatoes with bread soaked in water and then squeezed to remove excess moisture.
