2lbs large quinces
Half lemon juice
2lbs sugar
1.5 cups water

Cooking Time: 
40-50 minutes
Cooking Directions: 

- Remove the peel from the quinces and rub the fruit against the coarsest side of a grater.
- Place the fruit in a saucepan with one cup of water and the lemon juice. Cover the pan and bring to the boil.
- When the quinces begin to soften, add another half cup of water, the sugar and the vanilla and leave to boil until the syrup thickens.
