2 Ibs green beans
3 spring onions, finely sliced
2 tablespoons parsley, finely chopped
2 eggs, hard boiled
5 tablespoons olive oil
2 tablespoons vinegar

Cooking Directions: 

- With a sharp knife cut off the edges of the green beans.
- Then slice them lengthwise.
- Boil the beans in a pot, in salted water for about 10 minutes over a medium fire.
- Remove the beans from the pot and drain them.
- Place them in a bowl and add the finely chopped onions, the parsley, the vinegar, the olive oil and mix.
- Garnish the salad with the hard boiled eggs, cut into round slices.
