70 walnuts small and fresh
12oz. glucose
3lbs sugar
4 cups water

Cooking Time: 
about 30 minutes
Cooking Directions: 

- Boil the walnuts in plenty of water, drain and soak in cold water for two days, changing the water several times.
- Boil 4 cups of water with the sugar for 10 minutes.
- Add the walnuts, boil for 5 minutes, remove from the pan, cover and leave for 24 hours.
- The next day, remove the walnuts from the pan with a slotted spoon, bring the syrup to the boil and when it starts to thicken, add the walnuts once again and boil until the mixture thickens well.
