5 tablespoons olive oil 
1 onion, grated 
1 garlic clove, finely chopped 
1 lb 2 oz (500 g) ground (minced) meat
2 1/4 lb (l kg) fresh or canned tomatoes, peeled and pureed
1 teaspoon sugar 
1 tablespoon red wine vinegar 
3 tablespoons finely chopped fresh parsley
Pinch of ground cinnamon or allspice (optional) 

Cooking Time: 
1 hour
Cooking Directions: 

- Heat the oil in a large pan. Add the onion and garlic and cook over low heat, stirring occasionally, for about 5 minutes, until softened and translucent. 
- Add the ground meat, increase the heat to high, and cook, breaking up the meat with a fork, for about 15 minutes. 
- Add the remaining ingredients, cover, and reduce the heat. 
- Simmer, stirring occasionally, for about an hour, until the meat is tender and the sauce has reduced. 
- This sauce can be served with pasta or rice or used for making moussaka, pastitsio, or other ground meat dishes.
