Half kilo (1 lb 2 oz) pastry sheet for «kataifi», i.e. finely shredded pastry
250 grams (9 oz) walnuts, finely chopped
100 grams (3 ½ oz) sugar
1 teaspoon ground cinnamon
1 ½ teacups butter
3 teacups sugar
2 teacups water
The rind of one lemon
The juice of one lemon

- In a bowl, mix the walnuts, the sugar and the cinna¬mon. Next, take a small amount of «kataifi» pastry and spread it into narrow strips. 
- Place one tablespoon of the walnut mix on one end of the pastry strip and roll it up tightly into a small cylinder.
- Repeat this process, until all the ingredients are used up. Place the prepared pieces of «kataifi» on a but¬tered pan and sprinkle them with melted butter. 
- Bake in a medium oven for about 30 minutes. 
- In the meantime, prepare the syrup as follows: 
- Place the sugar, the water, the lemon juice and the lemon rind in a pot and boil them for 15 minutes over a medium fire. 
- When the pieces of «kataifi» are ready, pour the boiling syrup over them, while they are still hot.
