Lahanodolmades (Cabbage rolls with meat)

1 soft cabbage
1lb ground beef
Half cup rice
3 eggs
2 spring onions, finely chopped
2 lemons
Half cup dill, finely chopped
Half cup olive oil

Cooking Time: 
1 hour and 35 minutes
Cooking Directions: 

- Cut of the cabbage stem, separate the leaves one by one and boil for 5 minutes in plenty of water.
- Drain and spread out over a clean working surface.
- In a large bowl, place the ground beef, rice, spring onions, dill, the white of one of the eggs, salt and pepper.
- Cut each leaf into two pieces, throw away the stalk and place one spoonful of the filling on each piece of cabbage.
- Roll up tightly and arrange carefully in a saucepan.
- Once you have finished, cover the cabbage rolls with water and add the oil and seasoning.
- Place an upturned plate over the rolls to weight them down so that not  to open up during the cooking,
- Cover the pan and simmer for about 1 and half hours.
- When cooked, arrange the cabbage rolls on a platter.
- In a bowl, beat the remaining two eggs ans the egg-yolk with the lemon juice.
- Add this mixture gradually to the juices in the pan, stirring as you do so.
- Bring to the boil pour over the cabbage rolls and serve immediately.
