3lbs lamb
1lb potatoes
2 cups rice
1 onion
3 tablespoons butter
1 bay leaf

- In a saucepan sauté the chopped onion in the butter until it softens.
- Cut the meat into pieces; add to the pan and sauté on all sides.
- Add the mashed tomatoes, four cups of hot water, the bay leaf and salt and pepper.
- Cover the pan and simmer for one hour until the meat is cooked through.
- Then, take it out of the pan, remove the bones and strain the stock left in the pan.
- Place the meat and the stock back in the saucepan.
- You should have about 5 cups of stock –if there is less, add some hot water.
- Add the rice, stir well and leave to cook for about twenty minutes.
- Remove the pan from the heat, cover with a towel and leave for about ten minutes.
