Ingredients: 

1 cup rice
4lbs leeks
3 spring onions
¼ cup dill
¼ cup parsley
1 cup olive oil
Lemon
Salt
Pepper
 

Cooking Time: 
30 minutes
Cooking Directions: 

- Prepare and wash the leeks and then cut into thick slices.
- Boil in a saucepan with 6 cups of water.
- Add the spring onions, dill, salt and pepper and leave to cook for about 15 minutes.
- As soon as the vegetables soften, add the rice and stir well.
- Cook for about 15 minutes, add the oil and cook for further 3 minutes.
- Sprinkle with lemon juice and serve.
