Lima beans on skewers

10oz lima beans
2 eggs
1 lemon
Lettuce leaves
3 tablespoons grated cheese
Half cup fine bread crumbs
Olive oil, for frying

Cooking Time: 
about 2 hours
Cooking Directions: 

- Soak the beans, in bowl full of hot water, overnight.
- The next day boil in plenty of salted water, taking care that the beans are well cooked without becoming mashed or split.
- Drain and leave to cool.
- Place the beans on wooden toothpicks, 3-4 beans on each one.
- In a bowl beat the eggs with the salt and pepper and dip the beans first into this mixture, then into the fine bread crumbs and lastly into the grated cheese.
- Fry in plenty of hot oil until golden.
- Remove, drain on kitchen paper and serve hot on a platter on a bed of lettuce leaves and garnish with lemon slices.
