1 lb 2 oz (500 g) squid, cleaned
2 tablespoons freshly squeezed lemon juice
Half cup finely chopped scallions (spring onions)
1 tablespoon finely chopped fresh parsley
1 tablespoon finely chopped fresh basil
Half red bell pepper, seeded and finely chopped
4 tablespoons balsamic vinegar
1 tablespoons olive oil
1 teaspoon dried oregano
1 bunch of arugula (rocket) leaves
Bibb or curly lettuce leaves
- Cut the squid into rings and simmer in a small amount of boiling water for about 20 minutes, or until tender. Drain and place in a bowl.
- Add the lemon juice, scallions, parsley, basil, bell pepper, vinegar, oil, and oregano. Cover and let marinate in the refrigerator for at least 12 hours.
- Serve the marinated squid on a bed of arugula and lettuce leaves.
