Ingredients: 

4lbs fish for soup (grouper, sea bream, striped grey mullet)
1lb mayonnaise
2 onions
2 carrots, 
3 celery springs
1 bay leaf
1 cup white wine
Half cup olive oil
Salt
Pepper

Cooking Directions: 

- Clean the fishes remove the entrails and wash thoroughly.
- Pour 6 cups of water into a saucepan and add the onions, the carrots, the celery, the bay leaf, the salt and the pepper.
- Bring to the boil and cook for about 20 minutes.
- Add the fishes and the oil and simmer for a further 15 minutes.
- Leave to cool and then remove the fish and place on a platter.
- Remove the skin and the bones of the fishes and cut into pieces.
- Mix the pieces of fish with the half of the mayonnaise and arrange the mixture on a platter.
- Cover with the remaining mayonnaise garnish with the boiled vegetables and serve.
