650 grams (1 lb 8 oz) minced meat
3 slices bread, medium-sized, without crust, soaked in water
 Half teacup red wine
1 medium-sized onion, finely diced
1 egg, beaten
Parsley, finely chopped
Half teacup melted butter
6 hardboiled eggs, shelled
1 ½ teacups tomato juice
2 cloves garlic, crushed
Olive oil
A pinch of sugar
Waxed paper

- In a bowl, place the drained bread the minced meat, the wine, half  teacup water, the onion, the beaten egg, salt and pepper, the finely chopped parsley and four tablespoons of butter. 
- Mix well by hand making sure that the bread is incorporated. Then place the mixture on a damp piece of waxed paper, and shape it into a rectangle. 
- Down the centre of the rectangle line the boiled eggs. Wrap the mixture around the eggs. Wrap the waxed paper around the meat roll and secure the two ends. 
- Butter a pan and place in it the meat roll which has been oiled. 
- Bake in strong oven for half an hour. Remove the waxed paper and con¬tinue cooking in a medium oven, until the roll turns golden brown. 
- In the meantime, prepare a toma¬to sauce as follows: 
- Boil the tomato juice for 5 min¬utes with half a teacup of water, the garlic, the sugar, salt and pepper and two tablespoons olive oil. 
- Pour the sauce over the meat roll and continue cooking for another half hour.
 Serve sliced, hot or cold.
