Mussel saganaki with tomato from Chalkidiki

1 lb 2 oz (500 g) mussels, shucked
1/4 cup olive oil 
1/4 cup water
1 tablespoon tomato paste
2 tablespoons finely chopped oregano
1 red chile pepper, finely chopped

Cooking Time: 
10 minutes
Cooking Directions: 

Rinse the mussels, drain well, and pat dry with paper towels. Combine the oil, water, tomato paste, half the oregano, and the chile pepper in a pan, season with salt and pepper and bring to a boil. 

Lower the heat, cover, and simmer for 5 minutes. Increase the heat, add the mussels and cook for 5 minutes, or until just tender, shaking the pan 2 or 3 times. 

Remove from the heat, sprinkle with the remaining oregano, and serve immediately.
