Noodles, Metsovo style

Hilopites Metsovu

Half kilo (1 lb 2 oz) noodles («hylopites»)
4-5 ripe tomatoes, finely diced
250 grams (9 oz) lard or bacon 
2 onions, finely chopped
2 cloves garlic
100 grams (3 1/2 oz) olive oil
Grated Kefalotyri or Parmesan cheese

Cooking Time: 
35 minutes
Cooking Directions: 

- Cut the lard or bacon into big pieces and place them in a pot with the olive oil.
- Acid the onions and the garlic cloves and saute for ten minutes over a medi¬um fire.
- Continue by adding the tomatoes the salt and pepper, some water or beef broth (if it is preferred). 
- Add the noodles (1 part noodles to 3 parts liq¬uid) and cook over a medium fire for about 25 minutes. 
- Serve hot as a main dish. Sprinkle over with the grated cheese.
