Preparation Time: 

1 kilo (2 lbs 3 oz) okra
2-3 ripe tomatoes, finely chopped
2-3 onions, finely chopped
2 garlic cloves, finely chopped
1 ½ teacups olive oil
1 teacup vinegar
2 tablespoons of finely chopped parsley

Cooking Directions: 

- Trim off the okra stems and place them in a bowl with salt, water and 1 teacup of vinegar. 
- Leave them for 1 hour. Rinse them thoroughly 2-3 times with plenty of water. 
- Leave them to strain. Saute the onions and garlic in the oil until lightly brown. 
- Add the okra and keep turning for 5 minutes. Add the finely chopped toma¬toes, salt, pepper, some water and let them boil in medium heat for about 1 and a half hour. 
- Serve warm or cold.
