12 eggs
400 grams (14 oz) mushrooms, sliced
400 grams (14 oz) sausages, sliced
4 tablespoons parsley, finely chopped
300 grams (11 oz) refined oil

Cooking Time: 
15 minutes
Cooking Directions: 

- In a frying pan, heat two tablespoons oil, add the mushrooms and parsley and saute for about 5 minutes over a medium fire.
- Then beat 3 eggs in a bowl, add 2 tablespoons of the mushroom and parsley mix and sea¬son with salt and pepper.
- In another frying pan, heat 2 table¬spoons oil. Add the egg mixture, some sausage slices and some more parsley. 
- Stir a lit¬tle and let the omelette fry on both sides. Repeat this process with the remaining eggs, sausages, parsley and mushroom mixture. Serve the omelettes hot.
