Ingredients: 

5 eggs
1 teacup olive oil refined oil
1 tablespoon butter
Half  kilo (1 lb 2 oz) tomatoes
l/4 kilo (9 oz) okra
Salt
Pepper
 

Cooking Time: 
20 minutes
Cooking Directions: 

- Cut off the okra stems and wash them. Then, chop the okra in small pieces. 
- Heat the oil in a frying pan and cook the okra for about 10 minutes over a low fire. Next, pour in the grated tomatoes, some water, salt and pepper.
- Cover the frying pan and let the okra simmer, until all the water is gone and only the oil is left. 
- Add the butter and remove the pan from heat. Beat the eggs and stir in the frying pan. 
- Fry the omelette on both sides over a low fire. Serve hot.
