Ingredients: 

Half kilo (1 lb 2 oz) «kritharaki», a rice-shaped pasta) orzo
3-4 ripe tomatoes, finely diced 
2-3 onions, finely diced
2-3 cloves garlic 
1 1/2 teacups kefalotyri or Parmesan cheese, grated
1 1/2 teacups olive oil
Pinch of sugar
Salt
Pepper 
 

Cooking Time: 
35 minutes
Cooking Directions: 

- Lightly saute the onions and the garlic cloves in the oil on medium heat.
- Add the tomatoes, salt and pepper, a pinch of sugar and cook for another 10 minutes.
- Pour in 1 and a half kilos (3 lbs 6 oz) warm water or beef broth and bring to boil again. 
- Add the pasta and cook over a medium fire for approximately 25 minutes. Serve hot with grated cheese.
