200 grams (7 oz) feta cheese, cut in chunks
100 grams (3.5oz) black olives
2 red peppers, sliced
2 onions, cut in round slices
60 grams ( oz) refined oil
- In a frying pan, heat 3-4 tablespoons oil and saute the onions for 5 minutes.
- Remove the olive pits and cut the olives in half. Add the olives to the onions along with the red peppers and the feta cheese and continue cooking for another 5 minutes.
- Beat 3 eggs in a bowl and add two tablespoons of the «onion-cheese-olive-pep- per» mixture. In another frying pan, heat 2 tablespoons oil over a medium fire and pour in the omelette mixture.
- Fry the omelette on both sides. Repeat this process until all the omelettes are prepared. Serve hot.
