Pilaf with Artichokes

12 artichokes
1 and a half teacup butter
1 onion
3 teacups rice
2-3 lemons
Dill, finely chopped

Cooking Time: 
15-20 minutes
Cooking Directions: 

- Remove the tough outer leaves of the artichokes. With a sharp knife scoop all the «hairy inside» in the middle of the heart out. Cut their stems and use them only if they are tender.
- Rub the artichokes with a lemon and immerse them immediately into cold water.
- Boil the artichokes in plenty of water to which the juice of 2 lemons has been added. When they are done, remove them from the water. 
- Filter the water in which the artichokes were boiled and cook the rice in it (2 parts water to 1 part rice) for 15-20 minutes over a low fire. 
- Stir the rice and place the artichokes over it with their back parts facing upwards. Season with salt and pepper. 
- Heat some butter in a frying pan, lightly saute the onion in it and pour over the rice and the artichokes. 
- Serve hot, sprinkled with dill.
