Ingredients: 

2lbs octopus
2.5 cups rice
6 cups water
Half cup olive oil
1 cup tomato juice
1 onion, chopped
Salt
Pepper
 

Cooking Time: 
about 1 hour
Cooking Directions: 

- Wash and clean the octopus and cut into pieces.
- Place in a saucepan and simmer until it turns red and its juice has run.
- Add the chopped onion to the pan, stir and pour in the oil.
- Sauté for about five minutes, add the tomato juice and salt and pepper.
- Simmer for 20 minutes and add the water, stirring as you do so, and bring to the boil.
- As soon the mixture comes to the boil, add the rice, stir, cover the saucepan and cook for about 20 minutes.
- When the food is ready, remove from the heat, cover with a towel and leave for 10 minutes before serving.
