Pork with «pligouri» (cracked wheat) and chick peas

Preparation Time: 

1 kilo (2 lbs 4 oz) lean pork, cut into portions
Half teacup butter
Half teacup «plygouri» (cracked wheat, finely chopped)
1 teacup chick-peas
1 teaspoon baking soda (optional)

Cooking Directions: 

- Wash and strain the meat. Soak the chick peas in salted water with the baking soda overnight. In the morning rub them wrell with salt to remove their skins. 
- Rinse the peas, drain them and put them in a pot with the meat. Cover with water, season with salt and cook. While cooking add water, if needed. 
- You should be left with about three teacups of broth, when the cooking is done.
- Pour this broth into another pot and bring to a boil. Add the «plygouri» (cracked wheat), season with salt and cook until all the liquid is absorbed. 
- Heat the butter in a frying-pan until boiling, pour over the cracked wheat, cover the pot and allow for the liquid to be absorbed.
- Finally, serve the cracked wheat on a platter. Garnish it with the meat and the chick peas. Sprinkle with cinnamon.
