3lbs pork (shoulder-blade or saddle)
4lbs roots of celery
3 eggs
3 lemons
4 tablespoons butter
3 tablespoons flour
1 cup wine

Cooking Time: 
about 1 hour and 30 minutes
Cooking Directions: 

- Cut the meat into portions, heat the butter in a saucepan and sauté the meat, turning it over on all sides.
- As soon as it is brown, sprinkle with the flour, salt and pepper.
- Stir 2-3 minutes and add the wine and 2 cups of hot water and simmer for about one hour.
- In the meantime, wash the celery roots and cut into slices.
- Boil for 5 minutes in plenty of water and drain.
- As soon as the meat is cooked, add the celery and leave to cook for about another half an hour.
- Beat the eggs and slowly add the lemon juice.
- Gradually add the stock from pan to the egg and lemon sauce stirring well.
- Pour over this back into the pan, shaking it so that the sauce is evenly distributed over the food.
