1 ½ kilos (3 lbs 6 oz) lean pork leg
2 kilos (4 lbs 8 oz) leeks
1 glass red wine
2 eggs
Olive oil
The juice of one lemon

Cooking Directions: 

- Wash the pork, cut it into portions and drain. Heat some oil in a pot and saute the meat in it. 
- When the meat looks golden brown, pour in the wine and season with salt and pepper.
- In the meantime, top and tail the leeks, discard the coarse leaves, rinse and slit them down the middle. 
- Add the leeks to the pot with the meat and let them cook in their own liquid (water). 
- Add some water, if needed. When the leeks are done, prepare an egg and lemon sauce and pour it over the food. Serve hot.
