Ingredients: 

3lbs pork (neck or shoulder-blade)
4 cups red dry wine
Half cup olive oil
Salt 
Pepper

about 1 hour
Cooking Directions: 

- Prepare the meat the evening before you wish to eta it by washing it well and cutting it into thin pieces.
- Place in a bowl; pour in the wine and leave to marinate overnight in the refrigerator.
- Heat the oil in a saucepan; drain the pieces of meat (keeping the liquid) and sauté well.
- As soon as they are brown all over, add 2 cups of wine, the salt and pepper and a little water.
- Cover the pan and simmer for about one hour.
