4-5 medium sized potatoes
2 small onions, sliced
2 tablespoons parsley, finely chopped
Half cup olive oil
- Wrap the potatoes in an aluminum foil, place them in a pan and bake them for about an hour in a medium oven.
- Take them out, and when they are cold enough to handle, peel them and slice them.
- In a bowl, mix the potatoes with the sliced onions, the chopped parsley and the olive oil.
- Season to taste.
- Serve cold either as an appetizer or a main dish.
