Half lb prunes
1 tablespoon butter
1 tablespoon flour
2 tablespoons lemon zest
1 tablespoon rum
2 teaspoons sugar
- Soak the prunes overnight in water and then boil for 20 minutes.
- Once they are soft, strain them, keeping the juice, and chop them finely
- Melt the butter in a saucepan and add the flour, stirring continuously.
- Add a cup of the prune juice, the rum, a little cinnamon, the lemon zest, sugar and chopped prunes.
- Stir and add the lemon juice and the seasoning.
- Serve hot.
