1 large pumpkin
Mint, finely chopped
Oil for frying
- Slice the pumpkin, grain it and let it drain well.
- Put the drained pumpkin in a bowl.
- Add the chopped onions, the mint, salt and pepper, and mix all the ingredients very well.
- If the mixture is watery, add the toasted bread crumbs.
- Heat the oil in a frying pan.
- Coat spoonfuls of the pumpkin mixture in flour and fry on each side turning them once, until they become on both sides light brown.
