1 rabbit (3lbs)
1lb tomatoes
1,5lbs small onions
3 garlic cloves
2 cup wine
4 tablespoons vinegar
1 chopped onion
3 bay leaves
1 tablespoon rosemary
5 pimento seeds
3 tablespoons butter
Half cup olive oil

Cooking Time: 
about 1 hour and 30 minutes
Cooking Directions: 

- Wash and cut the rabbit into portions.
- Prepare the marinade by boiling the wine, vinegar, onion and rosemary for 5 minutes.
- Once the marinade is cold, place the pieces of rabbit in it and leave covered in the refrigerator for 2-3 hours or overnight.
- Remove the meat from marinade and wipe dry, then heat the oil in a pan and sauté the rabbit all over.
- Pour in the marinade and add the mashed tomatoes, pimento seeds, bay leaf, salt and pepper and simmer for about half an hour.
- Peel the onions and the garlic. Sauté in butter in a deep frying-pan and add to the rabbit mixture.
- Leave to cook for about one hour and serve.
