1 cup rice
3 cups water
6 eggs, beaten
1 cup milk
3 tablespoons butter
2 tablespoons flour

- Boil the rice in a covered saucepan for about 15 minutes, until it has absorbed the liquid.
- In a frying pan, mix the flour with the milk and leave to cook for a few minutes.
- Remove the pan from the heat and add the beaten eggs, salt and pepper.
- Add the eggs mixture to the rice and stir well.
- Heat the butter in a frying pan and add the rice mixture.
- Fry the omelet on both sides, remove with a large ebb-slice and serve.
