4 tablespoons olive oil
- Sprinkle the joint with salt and pepper and place on a grill containing a little water.
- Whisk the oil with the lemon juice and brush this over the meat.
- Roast in the oven at 350Fo for about 2 and half hours
- If you wish you can add some potatoes to the roasting dish under the meat and leave them to roast slowly together.
