Half cup rice
1.5 cups water
10oz hard cheese
2 eggs
Half cup heavy cream
2 tablespoons butter
1 small green pepper
1 onion, finely chopped

Cooking Time: 
Cooking Directions: 

- Bring the water to the boil with a little salt and the rice.
- Cover and simmer for 15 minutes until the rice has absorbed all the liquid.
- Beat the eggs in a bowl together with the cream and 3 tablespoons of water.
- Pour the beaten eggs over the boiled rice, add the grated cheese, pepper, finely chopped onion and salt and pepper and stir very well.
- Melt the butter and use this to butter a baking dish, add the rice mixture and bake in a preheated oven at 350oF for about half an hour.
