1 suckling pig leg (6lbs)
3 garlic cloves cut into pieces
1 tablespoon rosemary
4 tablespoons butter
1 cup white wine

Cooking Time: 
3 hours and a half
Cooking Directions: 

- Select a leg of suckling pig with the skin still on it.
- Make small cuts in the skin with a knife and push a garlic sliver into each one.
- Season well with salt and pepper and sprinkle with rosemary.
- In a small saucepan melt the butter and mix with the wine.
- Using this mixture, brush the leg all over and place in a roasting dish with 2 cups of water.
- Roast the meat in a hot oven for half a hour and then lower the heat to 325oF and cook for further 3 hours.
- During cooking, turn the meat and base with the juices at regular intervals
