Salted cod croquettes

500 grams (1 lb 2 oz) salted, frozen or fresh cod fish
500 grams (1 lb 2 oz) potatoes
3 eggs 
1 tablespoon olive oil
50 grams (2 oz) butter
1 teacup toasted breadcrumbs
Oil for frying

- In case that salted cod is used, cut it into portions and let it soak for 24 hours. Wash the potatoes and boil them in salted water. 
- Put the codfish in a pot with plenty of water and boil for two minutes. Cov¬er the pot and let it stand for a while. 
- Remove the codfish from the pot, skin and bone it and cut into very small pieces.
- Peel the cooked potatoes. Mash them and mix them with the codfish, 2 eggs yolks, the oil, salt and pep¬per with a wooden spoon. Let the mixture cool down on its own.
- Beat the third egg separately, along with the whites of the other two eggs. 
- Shape the codfish mixture into rectangular croquettes. 
- Dip into the beaten eggs, then coat them with the crumbs and finally fry them in plenty of oil on both sides, until they look golden brown.
