Salted cod pie

4lbs salted cod
1lb rice
1.5 teacups olive oil
2 onions, finely diced
1 tablespoon tomato paste
2 bay leaves
For the pastry
2lbs flour
Lukewarm water
A bit olive oil

Cooking Time: 
about 1 hour and 15 minutes
Cooking Directions: 

- Cut the salted cod into portions and soak in water for 24 hours.
- Remove the skin and the bones and cut into very small pieces.
- Heat a teacup of oil in a pot and sauté the finely diced onions in it.
- Add the cod pieces, the bay leaves, the salt and pepper and tomato paste diluted in a glass of water and cook for 15 minutes, stirring constantly with a wooden spoon.
- Add the rice and cook for another minute.
- Remove the pot from the fire.
- Prepare dough for the crust and roll it out into two sheets.
- Oil a pan and lay one pastry sheet on it.
- Oil the crust dough and put stuffing on it.
- Cover the pie with the other sheet.
- Pour oil over the pie and bake in a medium oven for about an hour.
