Preparation Time: 

1.5 kilos (3 lbs, 6 oz) salted or frozen cod fish
Half kilo (1 lb, 2 oz) rice
1.5 teacups olive oil
3 eggs
1 large onion, finely diced
4 cloves garlic, chopped
2 teaspoons tomato paste
2 glasses water

Half kilo (1 lb, 2 oz) flour
Olive oil
Warm water

Cooking Directions: 

- Cut the cod into pieces and soak it overnight in plenty of water (this course is followed in case you are using salted cod fish).
- The following day, boil the cod, remove its bones, cut it into small pieces and place them in a bowl.  
- Add the rice, the finely diced onion, the garlic, the parsley, the mint, the olive oil, the tomato paste, the eggs, salt and pepper and the 2 glasses of water. Mix all ingredients well.

Prepare the pastry as follows:
- Place the flour in a bowl, add some olive oil, salt and as much warm water as is necessary for a dough that is pliable. Knead the dough well by hand and roll it out into 2 pastry sheets.
- Brush a pan with olive oil. Line the pan with one sheet. Spread the filling over it. Cover with the other sheet and sprinkle with water. Bake in a medium oven.
