Salted codfish with short, thick macaroni (tubetti)

Preparation Time: 

1 kilo (2 lbs 4 oz) salted cod (it can be replaced by fresh or frozen cod)
1 teacup olive oil
3 ripe tomatoes, grated
1 large onion, grated
500 grams (1 lb 2 oz) short, thick macaroni (tubetti)

Cooking Directions: 

- Cut the cod into portions and soak in a bowl with water overnight changing the water frequently during the evening and the next morning, to remove the salt (in case you are using salted cod). 
- On the following day heat the oil in a pot and saute the onion lightly. 
- Add the grated tomatoes, salt and pepper the macaroni, the necessary amount of water and bring the pot to the boil. 
- When the macaroni is half done, add the pieces of cod (strained) without stirring. Rotate the pot to avoid sticking. 
- Cook for a further 10-15 minutes and take off the fire. Let the macaroni absorb more of the liquid. 
- Serve hot.
