Ingredients: 

2 teacups beef stock
1 onion, finely diced
2 carrots, finely diced
1 clove garlic
1 bay leaf
3 ripe tomatoes, finely diced
1 glass red wine
3 bacon, finely cut
1 teacup olive oil
1 teacup flour

Cooking Directions: 

- Pour the olive oil in a pot and sauté the onion, the carrots, the garlic and the bacon for about 10 minutes over a medium fire.
- Add the flour and let it turn golden.
- Pour in the wine and add the tomatoes, salt, pepper, the bay leaf, the beef stock and a small amount of water and cook for about an hour and a half.
- Taste and add more seasoning, if necessary. If the sauce is too strong, dilute it with a small amount of heavy cream.
- This sauce accompanies sautéed or grilled meats well.
