Ingredients: 

12 eggs
3-4 ripe tomatoes, finely diced
3 green peppers, thinly sliced
Olive oil 
l teacup milk
2 teaspoons sugar Salt
Pepper
 

Cooking Time: 
15-20 minutes
Cooking Directions: 

- In a frying pan, place the tomatoes, the sugar, the green peppers, 3 tablespoons olive oil, salt and pepper and let them cook for about 10 minutes. 
- Remove the tomato sauce from heat and prepare each serving portion as follows: 
 - In another frying pan, heat two tablespoons olive oil on a medium fire. Beat 3 eggs in a bowl, add 2 table¬spoons of the prepared tomato sauce, 2 tablespoons milk, salt and pepper to taste, mix and empty this mixture in the heated oil stirring from time to time with a spatula. 
- Cook until the eggs are done but not too solid.
- Repeat this process, until all the ingredients are used. Serve hot.
