2lbs sour cherries
2.5lbs sugar
2 cups water

- Remove the cherry stalks and the stones, using a special implement.
- Wash the stones in the water, stir and drain, retaining the water.
- Pour the water into a saucepan and boil with the sugar and the cherries over a low heat.
- Scoop off the foam which it’s been formed on the surface of the water and cook until the syrup has thickened.
- Once you remove the cherries from the heat, stir them regularly as this helps them to keep their shape.
