70 sour oranges, very small and green
3lbs sugar
3 cups water

Cooking Directions: 

- Using a special implement, make a hole in each orange and remove the pips.
- Wash the oranges, place in a saucepan with plenty of water and boil until soften and can easily be pricked with a fork.
- Drain and place in cold water for two days, changing the water regularly.
- Drain and lay on a towel.
- Boil the water with the sugar for 10 minutes and add the oranges.
- Leave to boil for 5 minutes, remove the pan from the heat, cover and leave for 24 hours.
- The nest day, remove with a slotted spoon and boil the syrup to thicken it.
- Add the oranges  and boil until thick and syrupy.
