1 ½  kilos (3 lbs 6 oz) spinach
400 grams (14 oz) Kefaloryri cheese, grated
7 eggs
7 tablespoons toasted breadcrumbs
5 potatoes, boiled

- Clean and wash the spinach very well. Shred it and rub in some salt. 
- Wash the spinach again, squeeze the excess mois¬ture and put it in bowl. 
- Add 250 grams (9 oz) Kefalotyri cheese, the crumbs, some oil and 5 eggs. 
- Mix well. Oil a pan and put it in the oven. When the oil is very hot, line the pan with the mix you have prepared. 
- Sprinkle over with some grated Kefaloryri cheese and make openings, the size of small lemons, in the spinach mix. 
- In a bowl, mash the boiled potatoes. Mix in the two eggs, the remaining grated cheese, some butter, and salt and pepper. 
- Mix the mashed potatoes, eggs and cheese well and using a teaspoon place quantities of this mixture into the openings in the spinach layer.
- Spread with a little bit of oil and butter and bake in a medium oven.
