1 kilo (2 lbs 4 oz) spinach
For the cream
4 eggs
1 teacup milk
250 grams (9 oz) semolina
300 grams (11 oz) feta cheese, grated
2 tablespoons butter
1 teaspoon baking powder

Cooking Directions: 

- Clean and wash the spinach meticulously. Boil, drain it well and season with salt. 
- Prepare the cream as follows: Beat the eggs for about 5 minutes. Then, pour in the melted butter. 
- Dissolve the baking powder in the milk and stir it in the egg and butter mix beating everything together. 
- Add small amounts of the grated feta cheese and the semolina alternately, beating all the time. Continue to beat for a further 10 minutes. 
- Butter a pan; pour in a layer of the cream, about 1 centimetre (1/2 inch) thick. 
- Cover the cream with half the spinach. Pour a second layer of cream over the spinach, place the remaining spinach over it, and finish with a layer of cream; spread some butter over it and bake the pie in a medium oven for an hour.
