1 veal spleen
3 tomatoes, mashed
1 onion, finely chopped
2 garlic cloves, finely chopped
1 cup red wine
1 bay leaf
1 cup olive oil

Cooking Time: 
about 1 hour
Cooking Directions: 

- Clean the spleen carefully, removing the membrane and cut into pieces.
- Heat the oil in a saucepan and sauté the pieces of spleen stirring carefully in all directions.
- Add the onion, garlic and wine into the pan.
- Boil for 2 minutes and then add the mashed tomatoes, bay leaf, salt and pepper.
- Cover the saucepan and simmer for about one hour, adding a little water if necessary.
