1lb split peas
1lb tomatoes, finely chopped
1lb onions, sliced
1 onion, whole
1 bay leaf
2 teaspoons oregano
5 cups water
1 cup olive oil

Cooking Time: 
about 1 hour
Cooking Directions: 

- Cover the split peas in water and soak for about 2 hours.
- Boil in a saucepan and remove the foam that forms on the surface of water.
- Add the whole onion, a little oregano, salt and pepper.
- Simmer for about one hour until the split peas are very soft and have formed a paste.
- Serve on a platter then add half the oil, the remaining oregano, stir and leave to cool.
- Heat the rest of the oil in a saucepan and sauté the sliced onions.
- When they have browned, add the chopped tomatoes, salt, pepper and the bay leaf.
- When the onions are cooked and the juices has been thickened, pour over the split peas.
