1 kilo (2 lbs 4 oz) squid
Half kilo (1 lb 2 oz) rice, washed and strained
2-3 onions, medium sized, finely diced
2-3 red peppers, finely chopped 
1 tablespoon parsley, finely chopped
1 teacup olive oil

- Prepare the squid as follows: 
- Remove the tentacles, the ink sacks and the fine inner bone. 
- Cut the squid in two and wash them well to remove all the sand, they may contain.
- In a pot, saute the onions in the oil, until they are gold¬en. Add the squid and the peppers and let them saute for another five minutes. 
- Next, add some water and let it boil for about 15 minutes. 
- Continue by adding the rice and the parsley. Al-low everything to cook for another 15 minutes over a medium fire. 
- Serve hot as a main dish.
