1 veal spleen
1 cup chopped feta cheese
1 tablespoon rice
2 cups wine
3 garlic cloves
Half cup parsley, finely chopped
Half cup butter
2 cups tomato juice
Half cup olive oil

Cooking Time: 
about 1 hour and 30 minutes
Cooking Directions: 

- Wash the spleen very thoroughly and using a sharp knife, cut length-wise along the thick section, so that you have an opening in which to place the stuffing.
- In a bowl mix the feta cheese, rice, crushed garlic, parsley, pepper, a little salt and two tablespoons of oil.
- Stir this mixture well, stuff the spleen with it and sew up the opening with thread.
- Place the remaining oil and butter in a saucepan and sauté the spleen.
- Add the wine, tomato juice, ¼ teaspoon each of oregano, thyme, salt and pepper, cover and simmer for about 1 and half hours.
- Remove from the saucepan, remove the thread and serve cut into slices with the sauce poured over the top.
