3lbs swordfish
5 tomatoes
3 green peppers
3 onions
2 lemons
Half cup olive oil

Cooking Time: 
1 Hour 30 Min
Cooking Directions: 

- Wash the fish, remove the skin and bones and cut it into large cubes.
- Place these in a large bowl and pour over the oil, the lemon juice, the salt and the pepper.
- Leave in the refrigerator for about 2 hours.
- Cut the tomatoes into large slices and green peppers and onions into large squares.
- Using metal skewers, place a piece of fish followed by a piece of pepper continuing with fish, tomato, fish, onion and so until the skewer is full.
- Place the skewers on an oven grid resting on a baking dish and cook under the grill of the oven or over a barbecue for 10 minutes on each side.
- Serve hot with oil and lemon dressing.
