Ingredients: 

¤ 1lb split peas
¤ 2 large tomatoes, finely chopped
¤ 2 carrots, finely chopped
¤ 1 onion
¤ 1 green pepper, finely chopped
¤ Half cup parsley, finely chopped
¤ Half cup lemon juice
¤ 1 cup olive oil
¤ Salt
¤ Pepper

Cooking Directions: 

- Soak the split peas in water for about 2 hours and then bring to the boil in the same water adding the whole onion.
- As soon as they are cooked add salt, stir and drain well.
- In a bowl mix together the finely chopped parsley, tomatoes, carrots and the green pepper.
- Pour over the oil and the lemon juice and stir well.
- Serve the puree on a platter, making a well in the middle into which a few spoonfuls of the chopped vegetables can be placed.
